VeganMoFo Day 3: What I Ate Wednesday

For day three of Vegan Mofo, I decided to hook up with Peas and Crayons’ What I Ate Wednesday. Just a day in the life of a plant based runner.

Mofo Graphic_2My day always starts very early with a cup of coffee, when I am usually too bleary eyed to even think about taking pictures. I usually pump a little toffee syrup or add a couple teaspoons of NuNaturals NuStevia cocoa syrup, and soy or coconut creamer. Yes, sweet tooth.

CoffeeThen I’m off to cross country practice, banana in hand (and then in mouth on the drive there). This morning I had an appointment at the Employment Development Department (the price I pay for my unemployment check), so I brought along some food for the road.

Hemp shakeI mixed up a package of chocolate Manitoba Harvest Hemp Pro 70 with almond milk and drank it on my drive to my appointment. It was okay. I’ll admit I preferred the full smoothie version, but this worked in a pinch (and kept me satisfied for several hours). Read my full review of Hemp Pro 70.

I also brought another banana and a package of Larabar Renola (which I picked up at the IDEA World expo).

I got home around 9:30 ready for some real breakfast, so I cooked up some Eggy Tofu.  I’ve talked about this before, but it is a secret addiction of mine. Eggs were one of the few things I missed when I cut animal products out of my diet. Not any more thanks to Kala Namak
and this recipe from Cadry’s Kitchen.

Tofu EggAlan always eats lunch late, and since I’ve been off all this time I have fallen into the habit too, so I can eat with him. That doesn’t stop me from being hungry at noon though, so I’ll usually grab some leftovers to hold me over. Today I just happened to have the makings for one more Best Vegan Burrito. I didn’t stuff it too full though, because it was supposed to be a snack.

Lunch, as it is most days, is a Subway/Starbucks combination. When we get there, I head to Starbucks to order the coffee, Alan goes to Subway to pick up the sandwiches. While Subway has been testing a vegan patty in some of it’s Los Angeles locations, at this point my option is my standby Veggie Delight, add lots of avocado, on French bread. Sorry about the crazy picture. I only took one, then didn’t check it until the sandwich was long gone. This is result of my photo editing attempts to un-blug the picture.

SubwayI’ve never been much of a meal planner.  I frequently find myself standing in front of the refrigerator at about 6:00 deciding what I want to make for dinner. Tonight, because I just happened to have some Gardein Chik’n Scallopini in the freezer, I decided to make “Chicken” Piccata.

PiccataAnd I might just splurge and have a few one cookie. I always have a bag of Trader Joes vegan chocolate chip cookies in the fridge.

I realized that with all this Vegan Mofo going on, I didn’t mention the weekend at all. I didn’t have a lot going on for Labor Day, but my cross country team did have our car wash on Saturday.

What I’m Eating: A Week of Vegan Food

In all my years of blogging about vegan food, creating and sharing recipes, writing restaurant reviews, I have never participated in any kind of a What I Ate Wednesday link up or written any thing like Lindsey’s Weekly Eats posts. And as those of who you read my blog, and my history of “series failures” know, it may be a while before you see another post like this. But, as I sat down to write today, I just kept thinking about all the awesome vegan food that I’ve eaten in the last week and I felt like I wanted to share.

I made the most delicious tofu scramble the other day. I’ve written (frequently) about my love of tofu scrambles, and I’ve posted several recipes (here and here). This time I winged it, keeping it very simple and it turned out great.

In a nutshell: One block of firm tofu, drained. Break it up with a fork (so that it looks like scrambled eggs). Add 1/2 teaspoon turmeric, 1/2 teaspoon cumin, 1/2 teaspoon celery salt, 1 teaspoon garlic powder, and a little pepper. Adjust to your taste. Chop up 1/2 onion, 1/4 yellow or orange pepper, 1 potato, and 1 or 2 Serrano or jalapeno chiles. Cook in a little olive oil over medium heat, until the onion is soft and the potatoes are slightly browned. Stir in the tofu mixture and cook, stirring frequently until the tofu is heated through. Reduce heat and cover. Cook over low heat until the potatoes are cooked. Add a little vegan cheese and re-cover until the cheese is melted. Serve with tortillas, avocado, salsa, etc.

Last night I made tempeh burgers. Nothing especially fancy or different about them but they were very good. I served them with baked potato and zucchini fries.

My variations on my shawarma recipes are always a hit in our household. This week I made it with seitan, served with quinoa, hummus, and pita breads.

I also discovered Nuttzo! I’ve been using heart healthy Nuttzo all week instead of my regular peanut butter. All the nuts and seeds used in Nuttzo are organic, there are no added sugars, and two tablespoons of the healthy fat in Nuttzo provide 50% of the daily allowance of Omega 3 ALAs. I am pretty boring with my breakfast food, but I’ve used Nuttzo in protein shakes, slathered it on bananas and on my morning toast or muffins all week.
