    What a great review! Some omnivores got fooled by eating Beyond Meat chicken-free strips, if the package wasn’t shown. Have you trie shredding them for small bite sizes? I’m a small bite eater :) And thank you for the mention and your peachy quinoa salad sounds and tastes incredible! Have you tried making two cups of quinoa? I tried to do 1:2 ratio for 2 cups of quinoa, and it made my quinoa too big and overcooked.

      Thank you. I haven’t tried them shredded yet. Maybe tonight, I have burritos on my mind :-)

      I usually do 1:2 ratio without any problem (if I’m understanding you correctly). The time I just made one cup, using a half cup of quinoa and 1 cup of water. I usually make a bigger batch because I will refrigerate any leftovers and use it for something.

    That sounds delicious and I want to eat peaches now!! They are my favorite summer fruit. I’m curious to try Beyond Meat. I used to be vegetarian and still don’t eat a lot of meat but am always looking for new protein sources. Curious to check it out.

    I’ve never tried or heard of Beyond Meat. I rarely look for meat alternatives but this might work well with a curry chikn’ salad recipe I have. Informative review.

      The longer I’ve been vegan, the less I use meat substitutes, but I occasionally like to duplicate a former meal that I used to make. Plus, my husband likes it too. I liked that I was able to eat it right out of the package and it tasted good.

    I will have to check that Beyond meat out next time I am at Whole Foods. I bet a couple of the other health stores might have it too!

    I found Beyond meat oily by itself and little mushy It also uses soy protein isolate. I did not care for it. But I liked your recipe when I did try your recipe with Smart Soy chicken.
